Try these black bean burgers for lots of fiber and lots of flavor.
3 pounds cooked black beans
¼ cup diced onion
½ cup diced red or green bell pepper
1 teaspoon cayenne pepper
1 egg substitute
1 cup bread crumbs
2 tablespoons cilantro
8 whole grain hamburger buns
Put beans, onion, bell pepper, cayenne pepper, egg substitute, bread crumbs and cilantro in a food processor. Process, and add more bread crumbs if you need to make the mixture dryer to form patties. Shape into 8 patties. You can make them ahead and keep them in the refrigerator.
Put the patties on the grill and cook until warmed through.
Serve with your favorite salsa.
