Delicious Yams

Everyone will want seconds of this dish, so you may want to double the recipe!

Ingredients
1 40-ounce can of yams
2 ½ tablespoons butter, softened
¼ cup brown sugar
2 teaspoons orange zest
½ teaspoon ginger
½ teaspoon ground cloves
½ teaspoon cinnamon
Smidge of salt and pepper
1 egg
1/3 cup orange juice

Topping
¼ cup brown sugar
1/8 teaspoon ginger
1/8 teaspoon cloves
1/8 teaspoon cinnamon
12-20 pecan halves, if desired

Directions

  1. Drain yam juice and set aside, in case you need more liquid. Pour yams into a large mixing bowl.
  2. Add sugar and orange zest. Stir.
  3. Mash yams a little bit, making sure to leave some chunks.
  4. Add spices. Stir.
  5. Add egg and orange juice. Stir and fold until all is well blended.
  6. Butter a 9 x 7,8,6 baking dish, and spoon yam mixture into it.

For Topping

  1. Combine all topping ingredients and mix and mash with a fork.
  2. Drizzle evenly on top of yam mixture.
  3. Place pecan halves decoratively on top.

Bake at 350 F. for 30 minutes. If you double the recipe, bake at 350 F. for 45 minutes. When done, the top should be gently browned and the liquid at the bottom should be slightly bubbly.

Makes 2 to 6 servings.
