This recipe livens up chicken without adding a lot of calories. And it doesn't take a lot of time, which is another big benefit.
2 cups fresh salsa
1/4 cup chopped cilantro
1 cup fat-free sour cream
1/4 cup low-fat shredded cheddar cheese
1 to 2 teaspoons of chili powder, to taste
Non-stick cooking spray
4 boneless, skinless chicken breasts
1. Pre-heat oven to 350 degrees.
2. In a mixing bowl, mix together salsa, cilantro, sour cream, cheddar cheese and chili powder.
3. Place chicken in a glass baking dish sprayed with non-stick cooking spray. Pour sauce over chicken and bake 40 to 45 minutes, until the chicken registers 170 degrees F. on an instant read thermometer.
